01 / ABOUT THE PLACE

About this place

When a bowl arrives at Morris, the first impression is its clean precision: straight, house-made noodles neatly folded into a crystal-clear broth. Located in Oyamahigashicho, the shop crafts its chuka soba with a gentle soup that blends chicken and pork stock with dried fish and niboshi sardines, releasing a rounded, mellow umami as you drink. The medium-thin noodles offer a smooth slurp and a clean bite, carrying just enough soup for an understated bowl you can happily return to on an ordinary weekday. Those seeking a heartier meal can opt for the "Toku-nose" topping, which adds tender braised chashu pork and a seasoned soft-boiled egg.

Deciding at the ticket machine is part of the fun. In addition to the soy sauce chuka soba, Morris offers a salt-based sio-chuka soba where the clean contours of the dashi broth come to the fore, and both broths can be paired with silky wontons. Wrapped in thin sheets of dough around a substantial meat filling, the wontons harmonize easily with the delicate soup. On days when you prefer to appreciate the texture of the noodles themselves, tsukesoba and wonton tsukemen provide a satisfying contrast between hot dipping soup and cold-rinsed noodles.

Unusually for a ramen shop, Morris devotes considerable care to its side dishes. Diners can round out their meal with rice bowls such as aori squid okizuke-don, made with bigfin reef squid from Minami Town in Kaifu District, Tokushima Prefecture, or Setsuko miso rice. Another beloved fixture is the house banana juice, made without added sugar or additives using blended Ecuadorian estate bananas. Beside the plain version, variations include black sesame, chocolate, kale, and strawberry, offering a refreshing palate cleanser after ramen.

The compact dining room is centered around a counter, offering a calm, approachable setting for a solo lunch or an evening bowl. Whether taking a quiet moment over a bottled beer while your order is prepared or stopping in for a quick, focused meal, the room accommodates each visit at its own comfortable pace.
